You store them wherever you like, encrypted with a public key. The important thing is the decryption key, which never has to leave the airgapped laptop or the printout in a vault. The law doesn't say the files have to be in a particular format or instantly viewable, any more than it says they need to be stored in an unprotected S3 bucket.
