Making it P2P could also enable a host of delivery Entreprenuers to participate in the delivery in a seamless way with the shopkeeper or the customer setting a delivery bounty.

That sounds like a problem requiring consensus hence not implementable with p2p tech. It would need a blockchain or something similar.
