Interesting! I like the psychology aspect behind this. Think about mom's cooking, or that hole-in-the-wall restaurant everyone loves, or that french fry that's a little more cooked and crunchy than the rest.
Normally, when it comes to products, we tend to look for conformity and patterns, otherwise it's deemed as a misfit and we don't want it.
But with food (to a certain extent) it's almost the opposite. We tend to recognize that unconformity = authenticity.
